The best curry ever story.


Whew.... I just finished writing my public policy analysis. It took me from about 12:00 this afternoon to 12:30 am. Granted I did not spend all 12 hours writing it..

I took breaks throughout the day, mainly to cook from what weird ingredients left in my fridge and cabinets. Ironically enough I did make some of the... not gonna lie, best yellow curry I've ever tasted today. It was so good, I took a picture after I ate about half of it just to remind myself of the ingredients that I used:



I used Kikkoman yellow curry mix. To be honest with you guys aside from their soy sauce Kikkoman has never been a brand I've been impressed with. Like most of their sauces used to marinade are disgusting in my opinion. This curry was in powder form and you mixed it with cold water and set it aside before you start cooking. It's this crazy bright ass yellow color. 

I thawed a few chicken breast strips then marinated them with the last of my Sriracha. I cut half a yellow bell pepper, used the last of a green bellpepper I had in a little baggy  in my fridge, and half an onion into thin strips. Once I flipped the chicken that was cooking in a wok in corn oil (blegh, need vegetable oil... they don't usually have it at Bargain market so I've gone without) I cut the chicken into small pieces using a wooden spoon while it was still cooking on the wok. 

The rice turned out perfect too. This time I didn't wash the rice and added a couple generous pinches of fresh minced garlic before I cooked it. Turned out delicious, the consistency of the rice wasn't sticky or mushy what-so-ever. I'd much rather the rice be dried and cooked through, especially with Thai dishes.

Anyway yeah, let the vegetables and chicken simmer with the yellow curry mix on the stove for awhile. That was such a good lunch, adding that to my recipes of stuff I can really cook if I want to make a good meal for someone..

This has been a pretty boring week so far



Man, after this shopping trip tonight I better have a job by the next time I need to go.

I have been searching quite a bit, networking around, etc... I'm hoping I can at least get an interview in the next week. Getting to that step is the most difficult part. I'm pretty sure if I could just get the interview I could schmooze my way into whatever I need. Tomorrow I'm going to call that steak house I delivered an application to yesterday as well as print out two more resumes for a couple restaurants around. There's also another place that's hiring that someone I happened to meet at Fred Meyer told me about when I asked him where the applications were located.

To be honest I don't want to work retail. I'd much rather have a more interactive job like being a waitress because it's so fast paced. Retail is boring but I will do what I have to do.

Today was pretty lame to be honest. I wasn't able to focus very well, I had to go grocery shopping so I didn't get to study, and now I'm exhausted and will probably go to bed without exercising now. Meh, I just feel like I wasted a lot of time today. Kind of feeling sad, this whole week has been quite boring to be honest and I've got little motivation to do anything else tonight.

I don't know, it's like I haven't hung out with anyone this week and that's kind of depressing but on the bright side I've made some major progress on the guitar this week. I'm really starting to get more comfortable with chord progression and Jacob is nudging me in that direction too. Our lesson was good today, you guys know me Thursdays are one of my favorite days because of my lesson alone. I just love the guitar so much I don't know where I'd be right now without it...

3 am post.... Pillsbury taco melts


Hey... It's 2:46 am, what's everyone up too?

Mm, I had a teabag explode in my water bottle earlier and I emptied it out and there's still some tea leaves floating around in there. Makes a pretty refreshing drink believe it or not-- just a tiny pinch of tea leaves steeping in my water. It somehow always makes my day better to have green tea in my water bottle in general I've noticed because it tastes good. Ha ha I saw Alex S. today and she noticed it. Alex takes a math class before my speech class so whenever I'm there early standing in the hallway she probably feels obligated to make awkward smalltalk with me.

I'd like to say I'm normally good with just waving at people but it seems like I'm always making small talk with people.. Just because more or less I am interested in what people are up too. This weekend my friend Bradley is making taco casserole with Pillsbury crust. Damn that sounds good right now.

Mmmm. 


I have to go grocery shopping "Today" (corrected from "tomorrow"). There's no way around it, I have few fruits and vegetables left in my apartment because I've ate them all... literally I just ate the last can of pears. There's no more fruit in the freezer, either. Blegh.. that's when I start eating sweets to compensate, that's gross. Or spend TOO much money at that stupid student store and get ripped off.

Alright well at least I have a plan now...

Eating fast, some anxiety with food.


Last night Brendan drove over... for the THIRD time this break, ha ha we can't seem to stay away from eachother for that long. No word from him yet this morning, he's probably just doing chores or hanging out with his brother or something.

We're going to see eachother in a few days on New Years eve. I'm really happy to start my year with him. I'm wearing the socks he got me right now. I've got some laundry to do and if Sam gets ahold of me I'm going to go into Richland to make a deposit then hang out with her. I texted her earlier but haven't gotten a response yet.

Brendan and I went into town to do a couple returns and we went out to a late lunch at Stone soup. I accidentally ordered a turkey sandwich even if I've been eating turkey for the past few days. I was craving vegetables more than anything but couldn't think of what meat I wanted so just got turkey. It was good though, I really like Stone soup. I got their delicious enchilada soup with the crushed chips on top, too. I ate too fast... Brendan makes me realize this because he eats his food at a really slow, controlled pace. I'm envious...

I think the main reason that I eat fast is because I don't enjoy most food that much. A lot of food I eat very quickly because I'm afraid that if I slow down and really taste what I'm eating I won't want to keep eating it and I won't get the nutrients that I need. Not enjoying food started when I was working at Rite Aid, taking two Bronkaid a day and barely felt like I needed food at all. Now I only take a half Bronkaid every couple days when I feel I need it and it doesn't seem to have a dramatic effect on my eating habits.


I think I will start purchasing cookbooks or cooking magazines to get more inspiration and recipes.. A lot of the food I cook for myself is more about substance and nutrients to feel full and not get sick. 

I think my fast eating cause a lot of my chest pains too. I've still been dealing with that. I'm going to buy some tums and antacids and hopefully that will absolve the problem and I won't have to see the doctor again. Brendan told me one free doctor visit is part of my tuition so I'm going to take advantage of that if these chest pains don't go away.

Brendan told me my personality is like a tornado. I wear my emotions on my sleeve. I think my eyes make my emotions very obvious.

I want more than anything to just believe there's nothing wrong with me. That I have nothing to worry about... We live in this country of fear and I try to live my life as happily and safely as possible. I feel like God and my ancestors gave me this incredible gift of intelligence, beauty and musical talent. I feel so lucky yet I often go through fear and anxiety that there's something wrong with my health and everything will be pulled out from under me. In the new year I want to improve this.

Becoming a better chef : ) Beauty inspirations and more


I spent my entire day at home... either playing guitar and watching Netflix or cooking something. I must admit I had really good food today.

I believe I'm becoming a better chef. That, or I'm good at picking things out at the grocery store.. But I feel like I eat so good here and I've sort of developed my own "taste" in how I cook if you will. 

Here's a list of things I cook most frequently (in no particular order):

1. Mexican eggs. Eggs, bacon bits, chopped olives, salsa, fried tortillas
2. Tempura chicken. Chicken dipped in flour, then egg, then tempura mix. Served with rice and Asian vegetables.
3. Speghetti noodles. With parmesan cheese and butter. Served with piece of grilled chicken.


4. Grilled chicken thigh with Magic blend seasoning. Or "Saigon" seasoning. 

5. Grilled thin steak topped with chopped peppers. Marinated in Thai rooster sauce. 

6. French fries. Potatos and other starchy foods help prevent panic attacks, according to Ashley. I've been trying to eat bananas, too, and I haven't felt like I was going to have a panic attack all day.

7. Steak donburi bowl. Chopped steak and veggies over rice. Sort of inspired by bibimbap. 

I had a steak donburi bowl for lunch today, actually. It's such a pain in the ass to clean out my rice pot that I don't make rice half as much as I used too. I can't believe I used to leave those rice pots alone in the sink when I lived back home, how rude... 

Josie D. commented a recent post I made on facebook and offered to show me how to wave my hair in 15 minutes. I think that would be really fun. 


I love Emma Watson, she's always been sort of a beauty inspiration to me so I'd like to figure out how to do my hair similarly. 


On the opposite side of the spectrum, some suicide girls have also been beauty inspirations to me as well.
